Caramelized Onion Focaccia

You may have seen this Caramelized Onion Focaccia referenced in my recipe for Easy Philly Cheesesteak Pizza, but I thought I’d give it it’s own recipe because it is one of my all time favorites! The dough is soft and pillowy, the onions caramelized and it’s topped with cheesy goodness. Let’s make this!

This dough is made in a bread machine using the dough cycle. You could always adapt it and make it by hand or a stand mixer, but this makes it so much easier … and lighter, in my opinion.

Another tip, use a really good and fresh yeast. I use (and love) this one:

I roughly start to shape the dough into a disk and cover, allowing it to rise for a second time.

It should look like this. A good yeast is the secret to this kind of light and airy dough.

Now, you’ll want to press the dough into your sheet pan and if it fights you, just let it rest for 5 minutes and come back to it. Once you have it spread out, create impressions with your fingers. This allows the toppings a place to go.

Aside from that light and airy dough, you will want to really take your time caramelizing these onions in butter. They should slow cook over medium heat so that they don’t burn, but rather turn this gorgeous golden shade. The onions are so tender and sweet at this point.

Allow those onions to cool and spread evenly over your dough.

Next, top with your favorite shredded cheese. I always use some kind of Italian blend. Top with freshly chopped parsley.

You could opt to add some toppings such as mushrooms or peppers, but don’t overload the focaccia or it won’t bake properly. Everything in moderation.

Once it’s fully baked, allow it to set for at least 10 minutes before slicing. It’s really hot!

Equipment

  • Bread Machine (or Stand Mixer)
  • Sheet Pan
  • Non-Stick Skillet

Ingredients

FOR THE DOUGH:

  • 3/4 c Water lukewarm
  • 2 tbsp Olive Oil
  • 2 c Bread Flour
  • 1 tbsp Sugar
  • 1 tsp Salt
  • 1 1/2 tsp Instant Yeast

FOR THE TOPPING:

  • 2 tbsp Butter
  • 2 large Yellow Onions
  • Garlic minced, OPTIONAL
  • Shredded Mozzarella or Italian Blend Cheese
  • Parsley for garnish

Instructions

  • Measure the dough ingredients in the order listed into the bowl of your bread machine. Choose the dough cycle which should be about 1 hour and 40 minutes. This usually includes the first rise and will knock it down when it's done.
  • Place the dough into a bowl and coat with a small amount of oil. Cover with a damp towel and place in a warm (not hot) place to rise for 30 minutes.
  • Take this time to caramelize the onions in butter. This takes almost 30 minutes to achieve over medium high heat. They should be golden and sweet. Minced garlic optional. Cool slightly.
  • Preheat the oven to 400 degrees.
  • Place your dough onto a sheet pan and using your fingers, press into the pan. If it resists you, let it rest for five minutes before proceeding. Use your fingertips to create dimples or impressions in the dough so the filling has a place to go.
  • Spread the cooled onion topping over the dough and add the shredded cheese and chopped parsley.
  • Bake for 18-22 minutes or until the dough is golden on the bottom and cooked through. Depending on your oven, this could take a bit longer.
  • Allow to cool for a few minutes and cut into serving-sized pieces. Enjoy!
