FOR THE RANCH DRESSING:
1/4cMayonnaise
1/4cSour Cream
1/4cMilk
1/2tspParsleychopped
1/4tspDried or Fresh Dill
Garlic Powderto taste
Onion Powderto taste
Salt & Pepperto taste
Lemon Juiceto taste
Instructions
Whisk together the ingredients for the ranch dressing and refrigerate until ready to use. It will thicken as it sits.
Beat eggs in one dish and combine breading ingredients in another.
Wash, dry and trim ends off zucchini. Slice in half and then in half again lengthwise. Finally, cut each half into 3-4 fries.
Heat oil over medium high heat and working in batches, bread all of the first batch of zucchini, adding them to your pan. Do not disturb until golden. Then flip and repeat until all sides are golden and the zucchini is tender. I use the tip of a sharp knife to test them.
Remove to a paper towel to drain and repeat with the remaining zucchini until all are fried.
